This tart is a staple at South African "basaars" and birthday parties across all communities.

Ingredients

  • 1 packet (200g) Tennis Biscuits
  • 150g butter, melted
  • 1 tin (397g) condensed milk
  • 125ml lemon juice
  • 1 packet (150g) mini marshmallows
  • 250ml fresh cream, whipped

Method

    Crush Tennis Biscuits and mix with melted butter.

    Press into a tart dish to form a crust.

    Mix condensed milk and lemon juice until thickened.

    Fold in whipped cream and marshmallows.

  5. 5

    Pour over base and refrigerate for 4 hours.

Top Tips

  • Use mini marshmallows for easier cutting|Ensure the lemon juice is real for better thickening|Chill the tart dish before adding the base|Decorate with extra marshmallows on top.
