
Classic sweet jam-filled tartlets topped with a light coconut meringue.
These treats were named after General J.B.M. Hertzog, the third Prime Minister of South Africa, who was famously fond of them.
Preheat oven to 180°C and grease a muffin or tartlet tray.
Sift flour and baking powder, then rub in cold butter until the mixture resembles breadcrumbs.
Stir in sugar and egg yolks, kneading lightly to form a manageable dough.
Roll out dough and cut circles to fit the tray holes, pressing them in gently.
Place a teaspoon of apricot jam into each pastry base.
In a separate bowl, whisk egg whites until stiff peaks form, then fold in castor sugar and coconut.
Dollop the coconut mixture over the jam to cover it completely.
Bake for 15-20 minutes until the coconut topping is golden brown.
