
A fragrant Cape Malay baked mince with warming spices, apricot sweetness and a golden egg custard topping. South Africa's national dish and the ultimate comfort food.
Bobotie (pronounced ba-BOO-tee) was born from the Cape Malay community in the Western Cape, blending spice traditions brought by Indonesian and Malaysian traders and slaves with the hearty home cooking South Africans love. References to the dish date back to the 17th century, making it one of the oldest recorded recipes in South African cuisine. It was served at a G8 summit and is widely considered the country's national dish. For South Africans in the UK, the smell of bobotie in the oven is pure nostalgia.
Tear the bread and soak in the milk. Set aside – you will use both the bread and milk separately.
Heat the butter and olive oil in a large frying pan over medium heat. Add the onions and cook until soft and golden, about 8 minutes. Add the garlic and cook for 2 more minutes.
Stir in the curry powder, turmeric and cumin. Cook for 1 minute until fragrant.
Add the mince, breaking it up well. Cook until browned all over, about 10 minutes. Drain any excess fat.
Stir in the apricot jam, chutney, vinegar, salt and pepper. Squeeze the soaked bread and mix it into the mince. Reserve the milk for the custard. Add flaked almonds if using.
Preheat oven to 180C (160C fan). Spoon the mince into a greased baking dish, press down firmly and tuck the bay leaves into the surface.
Whisk the eggs into the reserved milk with a pinch of salt and pepper. Pour evenly over the mince.
Bake for 35 to 40 minutes until the custard is set and lightly golden. It should not wobble when shaken.
Remove bay leaves, rest for 5 minutes, and serve.
